In order to celebrate spring finally showing up, I made myself a special and balanced, complete veggie lunch, with proteins, veggies, and carbs, as well as a light touch of fat – I made a shiitake omelette with the eggs from the farm that is literally next door and where the hens are the happiest I know, all of it seasoned with garlic and cornflower petals, as well as five-berry pepper and lemon oil.
